Betty Jean

Whose Betty Jean??

The story behind the name

That's a question that we hear every week since my father opened this restaurant. Some people mistakenly think it is my mother or even my sister, but Betty Jean was my great grandmother. She was a kind God fearing woman that loved to cook because it brought her entire family together. She passed this tradition down to her children and her children passed it down to theirs. My father loved this tradition so much that he kept it throughout his military service. No matter where he was stationed, food was his way of bringing his flight crew members, family, and loved ones together. When my great grandmother, Betty Jean, passed away, my father was inspired to open the restaurant in her honor. His goal was to bring the feeling of love and togetherness that his grandmother gave him to you. We are so happy that you gave us the opportunity to share that with you!

Sincerely,

Betty Jean's BBQ

A Legacy of Flavor and Growth

Omar Jones grew up in Rocky Mount, North Carolina, learning the art of Southern cooking from his grandmother, Betty Jean. From shucking corn with his grandfather to mastering pulled pork, Omar’s childhood revolved around family, food, and tradition. These moments shaped not just his palate but his passion for sharing authentic North Carolina barbecue.

After 20 years in the Air Force as a mechanic, Omar became “the go-to guy” for squadron cookouts and catering events. Despite being stationed worldwide, he called home to perfect family recipes, keeping his Southern roots alive. When he retired in 2014, Omar and his wife Dee transformed their love of food and community into Betty Jean’s BBQ, honoring his grandmother’s legacy.

First opening at Fairchild Air Force Base in 2015, the restaurant quickly gained a loyal following. In May, Betty Jean’s took a bold step forward, relocating to Spokane’s South Hill in Lincoln Heights, where it continues to serve beloved dishes like pulled pork sandwiches and smoked ribs.

“Our menu reflects who we are – our childhood, our family, and our love for bringing people together,” said Omar. The Joneses also honor Betty Jean by closing the restaurant on her birthday each year, a testament to the deep family ties that inspire their journey.

Betty Jean’s BBQ isn’t just about food – it’s about evolution, community, and celebrating the past while building for the future.
